Pumpkin Spice Pancakes (or waffles)

Combine the following together in a blender or food processor
2 cups flour
¼ cup brown sugar
1 tsp baking soda
1 tsp vanilla
2 eggs
1 cup Almond Milk
¼ to ½ tsp cinnamon (to taste)
¼ tsp nutmeg
½ of a sugar pumpkin (peeled and seeded) or 1 can of puree

Optional
¼ tsp ginger
¼ cup craisins or raisins

Blend well to taste.

To cook: brush a large nonstick skillet or griddle with butter and heat over medium-low heat. Add ¼ cupfuls of batter and cook until bubbly on top and golden on the bottom, about 4 minutes. Flip and cook until golden on the bottom, about 2 more minutes.

  • Pear Mincemeat in the center and Amber Pear over the top
  • Dab of Apple Chutney on top drizzled with Pear Honey
  • Mandarin Pear Mincemeat drizzled with Carmel Spice Pear Butter
  • Sprinkle Powdered Sugar and Craisins on top and serve.
