Apricot Curry Chicken Salad


3 chicken brests, boiled to tenderness that alows it to be shredded by hand

1/2 pint Apricot Curry Chutney

2-3 Tablespoons of mayo

1/2 cup cashews. Or more if you like. Some where between 1/2 to 1 cup

spread chicken into bowl, mix mayo and chutney in a separate bowl to be able to adjust to taste.

pour cashew in bowl with chicken. Add mayo/chutney and mix until all chicken and nuts are coated and it is moist.

salt and pepper to taste.

Serve as sandwiches, top a salad, with crackers.
